First make the focaccia dough:
• 200g active starter 
• 15g kosher salt 
• 450g filtered water 
• 520g all purpose flour 
• olive oil 

Combine all the ingredients except for the olive oil by hand. Cover and rest 30 min, then perform a set of stretch and folds. Cover and rest another 30 min, then perform another set of stretch and folds. Do this 2 more times for a total of 4 sets of stretches and folds over the course of 2 hours. Let the dough rest/rise for 8 hours (recommend overnight). After the bulk fermentation period, dump the dough out into a 9x13” pan lined with parchment paper and lightly drizzled with olive oil. Cover and rest for 4-6

🍔 Sourdough Hamburger Buns

Dough:
150g tangzhong (recipe in Step #1 below)
350g all purpose flour
20g honey
10g salt
160g water
150g sweet stiff starter
55g butter, room temperature and cubed

Directions:
1. Make the tangzhong. Heat 125g water and 25g all purpose flour in a small saucepan over medium heat, stirring frequently for 4-5 minutes until mashed potato consistency. Let cool.

Guys I’ve literally eaten 2-3 pieces of this bread every day. My new recipe uses tangzhong, which is a method of making a roux to go into your bread dough to make it softer and fluffier! 

Ingredients: 
For the dough: 
- 475g all purpose flour 
- 250g water
- 100g active sourdough starter 
- 25g melted butter (cooled slightly)
- 25g honey 
- 10g kosher salt 

For the tangzhong:
- 25g all purpose flour 
- 125g water 

Method:
1. Make the tangzhong by heating the 25g flour and 125g water in a saucepan over medium heat, whisking frequently, for 3-4 minutes or until a thick paste is formed. Let cool. 
2. Either by hand or in a stand mixer, combine the tangzhong and the remaining dough ingredients.

Once the egg mixture is very thick, use a bench scraper to cut the egg mixture into the flour, then knead with your hands.
