1/2 small red onion, chopped
1 red bell pepper, chopped

Ingredients:

1 cup avocado oil
1 egg
1 Tbsp Dijon mustard
1 Tbsp apple cider vinegar
2 tsp lemon juice
1/4 tsp salt

Directions:

Add the avocado oil to a pint size jar. Add in the remaining ingredients except the egg. 

Once all the ingredients are in the jar, carefully crack and add the egg. 

Using an immersion blender, hold to over the egg and blend until it becomes creamy. Slowly move the immersion blender up and down - blend the ingredients until it becomes mayo.

Store in the refrigerator for up to 2 weeks.

Helpful tip - use an egg that’s been refrigerated. I’ve tried doing this with fresh farm eggs that have not been refrigerated yet and it has never set up for me. Make sure your egg is cold.

Winter is for baked salads😌and this one has been a go to recently—wait until you try the dressing 🤌 I do recommend buying a bag of already shaved Brussel sprouts, rather than shaving them yourself🙃🔪 

Recipe 
- Start by thinly slicing 2 cups of brussels sprouts (or buy them shaved) add this to a pan on medium heat with 2 tablespoons of oil. Pan fry until golden brown and it starts to get crispy—about 6 to 7 minutes. 
- Add this to a bowl, along with 1/2 cup of diced apple, 1 tbsp of finely diced shallot, 1/4 cup of chopped pecans, 1/2 cup of chopped bacon, and 1/2 cup of shredded parm.

Here is how I made it:

1.Add 2 lbs diced chicken brst to a bowl. Drizzle with 1 tbsp olive oil & season with 1 tbsp oregano, 1 tbsp paprika, 1/2 tbsp onion powder, a few pinches of salt + ground pepper. To tenderize & break down the chicken fibers, I added 1/2 teaspoon baking soda. Finally, top with 1.5 tbsp plain yogurt, 3 minced garlic cloves, and 2 tbsp of the sauce from a can of adobo chipotle peppers and mix well. 1/2 cup cherry tomatoes 
1 cup canned corn 
2 tbsp onion 
3 tbsp olive oil 
2 tbsp fresh cilantro 
1 tsp black pepper 
2 tbsp apple cider vinegar 
2-3 tbsp lemon juice 
1/2 tsp oregano 
How to cook the turkey: heat a nonstick pan with cooking spray, add the ground turkey to the pan, add smoked paprika, tomato paste, salt, and pepper, and cook for 15 -17 minutes or until fully cooked.

Ratio for pickling ingredients
