Honduran Coconut Bread

“Pan de Coco, Pan de Coco” yelled the Garifuna ladies who walk on the beaches and around town carrying this delicious coconut bread in big buckets on their heads. The Garifunas live along the Caribbean coast of Honduras and on the island of Roatan.

1.30.2014 MY RECIPE FOR WHEAT YEAST ROLLS: Preheat to 400. In stand mixer bowl: blend 1/3 C. EVOO & 1/4 C. sugar. Pour in 1 C. warm H2O & sprinkle w 2 tbsp. active yeast. Let sit undisturbed for abt 15 min. Mix in w bread hook: 1 egg, 1 tsp sea salt, 2.5 C. sifted cake or bread flour, 1 C. sifted whole wheat flour. Blend until dough is smooth & elastic-y. Cut dough into 12 pieces, roll into balls & put them in a buttered 9x13 baking dish. Cover & let them sit for at least 10 min. Bake at 400…
