Sugarbelle's Royal Icing

Omit some confectioner’s sugar when making the royal and use cocoa powder in it’s place.  Use the dutch processed (Hershey’s Special Dark Cocoa Powder) since it is the lowest in fat and acid (all cocoa powder is relatively low in fat but it is just enough to totally kill your fluff when making meringue or royal if you’re not careful). You’ll have a naturally darker color as a jumping off point, and cocoa powder has a drying effect so it can help combat the ‘tacky’ icing problem too.
