Spicy Shrimp Tacos with a Southwest Avocado Sauce notes: really like the avocado sauce although I added sour cream to make it a bit creamier. Shrimp marinade was nice. Might halve the marinade time to avoid over cooking the shrimp in the lime juice.
Avocado Egg Salad: 4 hard-boiled eggs, 1 large avocado, 2 T. yogurt, 1 t. Pinch of salt and pepper. the best hard boiled egg salad i have ever had in my LIFE! i get bad cravings for this, so be forewarned!
